Featured Food Blogger of the Week: Kristen Stevens of The Endless Meal

Kristen Stevens is the force behind The Endless Meal.  She loves food so much that it has moved her to start a blog and share her own recipes to everyone.  She grew up in a small rural neighborhood in Kelowna, BC, but she has traveled the world.

Traveling has greatly enriched her cooking repertoire.  Despite having had experienced what the world has to offer, she always comes back to Canada’s West Coast and its culinary delights.

1. Have you always loved to cook?  What was your favorite dish while growing up?

I have! I remember being in the kitchen from a very young age. One of the first real meals I remember making was a devilled egg dish that was baked in a tomato sauce. I made it for my mom on her birthday and my sister and I served it to her for breakfast in bed when I was about 8 or 9 years old. One of my favorite meals as a kid was tuna casserole … I still can’t resist it the way my mom makes it!

2. After 12 years of being a vegetarian, how did you find yourself veering off from the vegetarian path? I can't blame you though. Who can resist bacon, right?

It was a piece of Bündnerfleisch (air-dried beef) that was served on a cheese and charcuterie platter that finally made me cave from my vegetarian ways. It just looked too good to resist. My second taste of meat was a pound of bacon (go big or go home!) and I haven’t looked back since.

3. What do you think is the best dish from Canada West Coast?

Canada’s west coast is very multi-cultural so it’s impossible to choose just one dish. We have some of the best Thai, Chinese, Japanese, Indian, and Korean food around. Don’t make me choose!

4. What is the one ingredient you absolutely can't live without?  And what is the one ingredient that you just hate?

I couldn’t live without garlic and onions … I know, that’s two. They can transform almost any dish into something tasty. I can’t think of any ingredient that I hate, although there are some things I’m not a big fan of. Really runny eggs are the one thing that gross me out, but even then I’d eat them if you served them to me without knowing how I feel about them.

5. Finally, what is your favorite original recipe on your website?

Oh man, that’s so hard to choose! Honestly, my answer will probably change each day you ask me. Right now, I’m going to say the Sea Salt and Brown Butter Chocolate Chip Cookies, but that’s probably just because I really want one to dip into my coffee right now. Tonight I might answer the Spicy Kung Pao Chicken or the Easy Vegetarian Skillet Lasagna with Kale Olive Pesto.
